My mom does not approve of my boyfriend. how do i handle?

I am 27 yo woman and he is 36. currently it is a long distance relationship as he lives in london. She has never met him. She knows i am happy with him, but does not like the fact that he does not have a college education and that he drives a car for a living. Other than that, he is an amazing person and he couldn't be more respectful and loving towards me. Its very upsetting that she won't even give the relationship a chance. I am independent, but very close with her, and its unsettling to have this big disagreement between us. How can i get her to give the relationship the same chance that i am?
