Best martial art or arts?

I'm 31, I am 5"10, and I weight almost 215, very overweight, I started eating better and working out about a month ago, I know do about 8 minutes at a 5.5. mph, and walk the remaining 36 minutes at 3 mph, so it's like a 325 calorie work out, n e ways, I want to know how I can defeat someone who is about 3 inches or so taller and is stronger, and no fat, he has no martial background or wrestling just farmer boy, who is is strong from throwing hey all day, and scrappy bully type, n e ways I was wondering if I started today, and got a good teacher and trained as much as possible within reason, in like 3 years could I out wrestle or defeat this guy in a fight or sparring match, he is probably like about 6"1 or 6"2 he's got reach, and he probably weighs about 185 or so, maybe 190 not thick a little skinny, what would be the best combination, I'm thinking keep working out for endurance each day, that would help, maybe hit the weight to gain strength, um, maybe train Muay Thai, there is a guy here in Milwaukee Duke Rufous top teacher in midest, maybe mix that with some grappling, like judo, or wrestling or brazilian jujistu, probably be a good combination, in 3 years if I did all these things, could I defeat an average guy, who is a little stronger, and taller? Also there are two camps for ufc training, one is Dave Strer in Kenosha, the other is in Milwaukee Henry Montaramos, tough guy, tough training environment, if anyone has any knowledge of Dave Ster's place in Kenosha, or Henry MOntaramos in Milwaukee, or experience with Muay Thai, or ground fighting, or also if you have see people start with no background in 3 years are able to defeat a guy with no background let me know, if it is possible, or if you need more time to use it in real life, or resisting opponent.
